Portland’s First Wood-Fired Pizza Oven
Frank Ernandes is a successful Oregon restaurateur whose childhood years occurred in both the Bay area and in Italy. When Frank was growing up he would spend summers and holidays in Italy visiting family.
It was there in Italy that Frank fell in love with authentic Italian style wood-fired pizza. He enjoyed it in places like Naples, Sicily, and Florence. Frank was enchanted by the charm and romance of pizza made in a traditional wood-fired oven.
In 1987 Frank brought the very first wood-fired pizza oven to Oregon when he had one installed at Ambrosia in Eugene. A few years later, in 1992 Frank was opening an Italian restaurant in the Pearl – Perlina. Frank then had a second traditional Italian wood-fired pizza oven imported from Italy and brought to Portland.
At the time, there no other traditional Italian wood-fired pizza ovens in Portland. That very same wood-fired pizza oven is in use today at Touché. That wood-fired oven has been part of Portland’s culinary history for more than 20 years.
The pizza dough at Touché is made just like Frank had it as a child in Italy. It is stretched by hand. Franks says that good pizza crust is like a good loaf of bread – a great crust and a wonderful interior. Stretching pizza dough by hand retains an important part of the texture.

By the way, Frank still loves wood-fired pizza and his personal favorite is a Margherita –plum tomato sauce, fresh mozzarella and basil. To that classic pizza Frank likes have just a little anchovy added. Give Frank one of those pizza’s and a bottle of good Italian red wine and he is a very happy man!
